The lettuce crop in Arizona meets the highest standards of production. Here, lettuce is being cut, trimmed, and packed in the field. Trucks stand by to haul the lettuce to vacuum cooling plants in cartons, where it is given the proper chilling for shipment to markets throughout the nation.
